Our Chef
A native of Chambretaud, Nicolas Pasquier returned to his native Vendée to serve as chef at the Château de la Barbinière after several years of experience in leading London restaurants, notably working with Joël Robuchon and the Roux family.
Now recognized as a “Maître-Restaurateur," he offers generous and authentic cuisine that blends French traditions with unique touches. Driven by his passion and supported by a dynamic team, he creates original, seasonal dishes using fresh, local ingredients to ensure that the flavors remain intact on the plate.
